🍋 Mediterranean Baked Fish with Tomatoes & Olives 🐟

Ingredients:
- 4 fish filets (cod, tilapia, or sea bass), 170g (6 oz) each
- 2 tbsp olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 can (400g/14 oz) diced tomatoes
- 1/2 cup (85g/3 oz) Kalamata olives, pitted & halved
- 1/4 cup (30g/1 oz) capers, drained
- 1 tsp dried oregano
- 1/2 tsp dried basil
- Salt & pepper to taste
- Fresh parsley, chopped, for garnish
- Lemon wedges for serving
Instructions:
- Preheat oven to 190°C (375°F).
- In a large ovenproof skillet, heat olive oil over medium heat. Sauté chopped onion for 3-4 minutes until translucent.
- Add garlic and cook for 30 seconds until fragrant.
- Stir in diced tomatoes (with juices), olives, capers, oregano, basil, salt, and pepper. Simmer for 5-7 minutes to meld flavors.
- Place fish filets on top of the tomato mixture, spooning some sauce over the fish.
- Transfer skillet to the oven and bake for 15-20 minutes until the fish flakes easily with a fork.
- Garnish with parsley and serve with lemon wedges.
