On colder days one way to warm up is by eating a delicious soup. And what’s better than a soup that tastes good, and is healthy?
Try out this Ginger-Carrot Soup to boost your immune system!
Ginger helps fight harmful bacteria and viruses and has anti-inflammatory and antioxidant properties. Carrots on the other hand, are a good source of vitamin A and B.
This is what you need for four servings:
3 tablespoons butter
6 to 7 large peeled carrots
32oz chopped (white) onion
1 teaspoon minced ginger
16oz vegetable stock
16oz water
3 large strips of zest from an orange
Salt
Melt the butter in a pot over medium heat, add the onions and carrots and stir occasionally for 5 to 8 minutes until the onions are soft.
Add some salt, the stock, water, ginger and the strips of orange zest.
Bring to a simmer, cover the pot and cook for about 20 minutes until the carrots are soft.
Remove the strips of orange zest and finally, purée the soup with a stick blender.
Serve in a bowl and enjoy!
