You’ll love this Summer Tuna Pasta with Zucchini and Lemon!
Ingredients:
8oz (225g) pasta (linguine or spaghetti)
1 large zucchini, thinly sliced
2 cans (5oz each) tuna in water, drained
Zest and juice of 1 lemon
2 cloves garlic, minced
1/4 cup extra-virgin olive oil
1/4 cup chopped fresh parsley
Salt and black pepper to taste
Grated Parmesan cheese for serving (optional)
Instructions:
Cook pasta according to package instructions. Drain and set aside
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant
Add sliced zucchini to the skillet. Sauté for about 3-4 minutes until the zucchini is tender and slightly golden
Stir in the drained tuna, breaking it apart with a fork
Toss in the cooked pasta, lemon zest, and lemon juice. Mix well to combine
Season with salt and black pepper to taste
Remove from heat and stir in chopped parsley
Serve the pasta in bowls, topped with optional grated Parmesan cheese
