Cauliflower No-Crust Quiche Recipe

Cauliflower No-Crust Quiche:

(Sorry crust lovers, but your taste buds will forgive you!)

Ingredients:

  • 2 tsp olive oil

  • ½ cup chopped onions

  • 5 large eggs

  • ½ cup low-fat milk (or rice/soy milk)

  • ½ tsp salt

  • 1½ cups chopped cauliflower

  • ½ cup shredded low-fat cheddar cheese

  • 1 tsp paprika

Directions:

  1. Preheat oven to 375°F (190°C). Lightly oil an 8×8″ casserole dish or 9″ pie pan. Add onions and place dish in oven while prepping.

  2. In a bowl, whisk together eggs, milk, and salt.

  3. Carefully remove hot dish from oven. Spread cauliflower and cheese evenly. Pour egg mixture over top. Sprinkle with paprika.

  4. Bake for 30 minutes, or until golden and cauliflower is tender.

Tips:

  • Store leftovers in a sealed container in the fridge for 2–3 days.

  • Swap cauliflower for broccoli if you’re feelin’ a little green.
