🍋 Mediterranean Baked Fish with Tomatoes & Olives 🐟

Looking for a light, flavorful dish that’s easy to make? Try this Mediterranean Baked Fish bursting with the vibrant flavors of tomatoes, olives, and fresh herbs! It’s a healthy, delicious meal that pairs perfectly with couscous, quinoa, or some crusty bread to soak up all that tasty sauce. 😋

Ingredients:

  • 4 fish filets (cod, tilapia, or sea bass), 170g (6 oz) each
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (400g/14 oz) diced tomatoes
  • 1/2 cup (85g/3 oz) Kalamata olives, pitted & halved
  • 1/4 cup (30g/1 oz) capers, drained
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt & pepper to taste
  • Fresh parsley, chopped, for garnish
  • Lemon wedges for serving

Instructions:

  1. Preheat oven to 190°C (375°F).
  2. In a large ovenproof skillet, heat olive oil over medium heat. Sauté chopped onion for 3-4 minutes until translucent.
  3. Add garlic and cook for 30 seconds until fragrant.
  4. Stir in diced tomatoes (with juices), olives, capers, oregano, basil, salt, and pepper. Simmer for 5-7 minutes to meld flavors.
  5. Place fish filets on top of the tomato mixture, spooning some sauce over the fish.
  6. Transfer skillet to the oven and bake for 15-20 minutes until the fish flakes easily with a fork.
  7. Garnish with parsley and serve with lemon wedges.
