Protein-Packed Mac & Cheese

Ingredients:
8oz (225g) whole wheat or protein-enriched macaroni
450 grams (2 cups) of cooked chicken breast, diced
150 grams (2 cups) of broccoli florets, steamed
480 grams (2 cups) of low-fat cottage cheese
240 grams (1 cup) of plain Greek yogurt
120 grams (1 cup) of shredded sharp cheddar cheese
60 grams (1/2 cup) of grated Parmesan cheese
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon black pepper
1/4 teaspoon paprika
Salt to taste
Chopped fresh parsley for garnish (optional)

Instructions:
Preheat the oven to 375°F (190°C)
Cook the macaroni according to the package instructions. Drain and set aside
In a blender, combine cottage cheese, Greek yogurt, garlic powder, onion powder, black pepper, and paprika. Blend until smooth
In a large mixing bowl, combine the cooked macaroni, diced chicken, and steamed broccoli
Pour the cottage cheese mixture over the macaroni mixture and mix well.
Fold in shredded cheddar cheese and grated Parmesan cheese
Season with salt to taste
Transfer the mixture to a baking dish and spread it evenly
Bake in the preheated oven for about 20-25 minutes, until the cheese is melted and bubbly
If desired, garnish with chopped fresh parsley before serving
